Strawberry Cake Lemon Buttercream Frosting!!!
Strawberry Cake Lemon Buttercream Frosting is probably the best cake EVER!! Sweet and Tangy, such an amazing combination.

Last year I made my sister some Strawberry Cupcakes with Lemon Buttercream Frosting… they were AWESOME!
Since she loved the cupcakes so much I decided to me her a ”cake” version of the cupcakes for her birthday.
What do you think? Looks yummy doesn’t it?
There’s just something wonderful about the combination of the sweetness of the strawberries with the sour taste of lemons.
Here’s the recipe:
Strawberry Cake Lemon Buttercream Frosting Recipe
Strawberry Cake Recipe
Ingredients:
- 1 1/2 cup fresh strawberries, sliced in half
- 3 cups all purpose-flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1 cup unsalted butter
- 2 cups sugar
- 2 large eggs
- 4 large egg whites
- 2 tsp vanilla extract
Instructions:
1- Preheat oven to 350F.
2- Prepare two round cake pans. How to line a cake pan.
3- In a medium bowl, combine flour, baking powder and salt and set a side.
4- In a food processor or blender add strawberries and process until pureed.
5- Empty pureed strawberries into a 2/3c measuring cup and set aside.
6- Using a electric mixer with bowl, cream butter on medium high speed until lightly fluffy.
7- Gradually add sugar and continue to mix until well blended. Reduce speed to low and slowly add one egg and egg whites and mix until lightly blended.
8- Add vanilla extract if using.
9- Mix together milk and 2/3c strawberry puree.
10- Alternate flour and milk mixture to mixer slowly ending with flour. Scrap down sides of bowl and continue to blend well.
11- Pour half the batter in one round pan and pour the rest in the other pan.
12- Bake for 20 to 25 minutes, or until lightly browned.
13- Cool the cakes completely on a wire rack before adding the frosting.
Lemon Buttercream Frosting Recipe
Ingredients:
- 2 cups unsalted butter, softened
- 7 1/2 cups confectioners’ sugar
- 2 lemons, juice and zest
- 2 tsp vanilla extract
- 1/4 tsp salt
Instructions:
1- Combine butter, sugar and salt and beat until well combined.
2- Add lemon juice, zest, and vanilla and continue to beat until creamy.
How to assemble the cake
Place on cake sheet on a cake dish.
Put some icing over the top of the cake.
Place the second cake sheet over the icing.
Spread the remaining of icing over the entire cake.
