Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins ~ I was craving banana muffins last week, so when Gabrielle got back from school I asked her if she would like to make some for me us. We’ve made them together on several occasions, but this was the first time she was in charge and did most of the recipe all on her own. The few things I did were;  softened the butter in the microwave and I was in charge of the oven.

Banana Chocolate Chip Muffins

Banana Chocolate Chip Muffins

Makes about 12 Muffins

Ingredients:
2/3 cup of butter
1 cup of sugar
2 eggs
2 medium sized bananas
1 1/2 cups of flour
1tsp baking soda
Semi-sweet chocolate chips (Gabrielle usually uses 3/4 of the bag)

Instructions:
1 – Heat oven to 350F.
2 – In a large bowl, cream together the butter and the sugar using a mixer.
3 – Add 2 eggs and mix again.
4 – Place the bananas in a small bowl and with a fork mash them.
5 – Put the mashed bananas inside the large bowl and stir together with a wooden spoon.
6 – Add the flour, baking soda and the chocolate chips and stir until well blended.
7 – Place cupcake liners inside your muffin pan. Fill the liners with about 2/3 to 3/4 full of batter.
8 – Bake for 25 to 30 minutes. (Baking time varies)

Gabrielle did a wonderful job making these muffins, right? They were DELICIOUS and only lasted a day. OUPS! She’ll be making more today to bring to a tea party she is having with her class tomorrow.  I’m going to have her try to make more recipes, she enjoys it and she’s great at it.

I was so excited to find this! I have 3 bananas that need to be used pronto and I was hoping to find a good recipe for them so I could make something tonight! Perfect.

She is so Cute Christine and the muffins look so yummy, I'm not a big fan of banana recipes but I honestly would give it a try, they look very good and I really like banana with Chocolate, I actually have a recipe myself that involves both things!!!!
