Mini Pancakes {Toaster Pancakes}
Mini Pancakes are perfect for weekdays. Why? Because they are mini, they easily fit in your toaster to be reheated. Make them on Sunday and store them in the fridge or the freezer and you can eat pancakes everyday of the week. YUMMY!
Mini Pancakes
Ingredients:
1 1/2 cups of all-purpose flour
3 1/2 tsp baking powder
3/4 tsp salt (I don’t use any salt)
1 tbsp white sugar
1 1/2 to 1 3/4 cups of milk (You can add more or less milk depending on how thin you like your batter)
1 egg (room temperature)
3 tbsp melted butter
Directions:
1- In a large bowl, sift together the flour, baking powder, salt and sugar.
2- Make a well in the center of the mix and pour the milk, egg and melted butter. Mix until smooth.
3- Heat a lightly oiled frying pan over medium high heat.
4- Once the pan is hot, pour a small scoop of batter onto your frying pan (remember, you want the pancakes to be small).
5- When the batter starts to bubble, it’s time to flip the pancake over to brown the other side. The pancake is ready when both sides are brown and the middle of the pancake is cooked.
6- Now that the pancakes are ready, let them cool on a cookie sheet.
How to store mini pancakes:

Wax Paper
Large Ziplock Bag
Instructions:
Step 1: Cut small squares of wax paper. Step 2: Place a square piece of wax paper on a clean surface and put a pancake on it. Put another square piece of wax paper on top of that pancake and place another pancake on top. Repeat until you have a stack. (The reason we are placing wax paper between each pancake, is to prevent them from sticking together). Step 3: Place the stack of pancakes inside a freezer bag, seal it shut and place it in the freezer. (You can easily store them in the fridge too, it really depends on how quick you are planning on eating them.)

To re-heat:
Place the mini frozen pancakes in the toaster and take out when they are hot.
(My husband likes to put his in the micro-wave, he likes the pancakes soft).
My family LOVES it when we have these in the freezer. Gabrielle can easily serve herself and her sister. She loves being able to ”make” breakfast. Do you prepare weekday breakfasts a head of time?

Great idea!!! I do the same with waffles. My waffle maker makes 2 squares at a time, perfect for placing in a baggie and freezing for one serving….just pop in the toaster!!!
Great idea! We do the same thing with leftover waffles, but I hadn’t thought about reheating pancakes in the toaster.

How much servings do these make? I wanna make them now!!!
It depends on the size of pancakes you are making. I like to make one batch for us to eat (it’s enough for my husband, me and my two daughters). I then make a second batch to freeze. Hope this helps. :)
